Avocado Sandwich with Cheddar Cheese and Spicy Mayo:

  • 1/2 Avocado
  • 4 Cherry Tomatoes
  • 1 Radishes
  • Grated Mild White Cheddar Cheese
  • Extra Virgin Olive Oil
  • Sea Salt
  • Freshly Cracked Black Pepper
  • 2 Slices of Whole Wheat Bread

Spicy Mayo:

  • 1/4 Cup Mayo
  •  Couple Dashes of Tabasco Sauce
  • Pinch of Cayenne Pepper
  • Pinch of Granulated Garlic
  • 1 Teaspoon of Lemon Juice
  • Sea Salt
  • Freshly Cracked Black Pepper
This is a great light sandwich that’s perfect for spring time.  Eat it with chips of your choice and enjoy the weather. 

In a small bowl mix together all the spicy mayo ingredients using a spoon.  Taste it, if you feel it needs to be spicier add more cayenne or hot sauce.  You can always make ahead and refrigerate.

Slice up you avocado, radish and cherry tomatoes.  Season everything well with salt and pepper and a drizzle of olive oil.  I like to also squeeze some lemon on my avocado.

Grate some cheddar cheese, enough to cover everything in your sandwich. Set aside. 

Toast your bread.

Now assemble! Spread a generous amount of spicy mayo to both slices of bread.  Lay out the avocado on one slice.  Then pile on the radishes and cherry tomatoes.  Top the veggies off with the cheddar cheese, and the other slice of bread.  Cut sandwich in half.
